Happy Jamaica Day to you :-)

Yeah, today is actually Jamaica Day officially - as designated by the Ministry of Education.

Jamaica Day is celebrated each year as part of the Ministry of Education, Youth and Information effort to instill the spirit of nationalism which is necessary for the social and cultural development of Jamaica.

I accompanied Ali (my 5 year old daughter) to her school today, took some pictures and shared my excitement here.

It truly captured the essence of Jamaica, from the wonderful display of traditional Jamaican food, to the authentic Jamaican poetry and speech - awesome!

Go ahead and read it my friend:

Did you notice that I listed Jamaican banana fritters as one of the delectable items on display there?

Yup, And I am happy to tell you that I have the recipe for it.

Here is it:

Enjoy!

And as I always ask of you, please share this with someone.
